As we write this, know that today is one of the loveliest holiday's for us pagans, witches and spiritualist all over the world, Beltane! Beltane is celebrated on 5/1 of each year and is the peak of spring and the welcoming of summer. So much love, beauty, grace and abundance in every corner of the land. All the animals, flowers, plants and LIFE are thriving and dancing in the fertilizing sun rays that shine upon us all. This is not a time to be greedy, share your fruits with neighbors, friends, family and partner.
In celebration of Beltane, let us light up bonfires and make simple cakes and mead to share for the nights feast. Gather native wood, or if you wish to make it more traditional be sure to use apple, cedar, juniper, oak, pine, poplar, dogwood, and mesquite wood to burn. Let us gather flowers of all kinds and place them anywhere our heart desires, and let us prepare to make our intentions come true.
The following recipes are great for all the Sabbats, but are especially great for spring and fall Sabbats.
- 1 cup finely grounded almonds
- 1 1/4 cups of flour
- 1/2 cup of confectioner sugar
- 2 drops of almond extract
- 1/2 cup of butter, softened
- 1 egg yolk
Combine the almond, flour, sugar and extract until thoroughly mixed. Work in butter and egg yolk with hands, until all is well blended. Chill the dough. Set oven to 325 degrees F. Pink off walnut sized pieces and shape them into crescents. Place them on greased baking sheet and bake for about 20 minutes. Best serve these during The Simple Feast with mead or wine.
Beltane Custard 5/1-May 1st
- 2 cups of milk
- 1 cup of organic marigold petals
- 1/4 tsp. of salt
- 3 tbsp. of sugar
- 1-2 inch piece of vanilla bean
- 3 egg yolks, slightly beaten
- 1/8 tsp. allspice
- 1/8 tsp. nutmeg
- 1/2 tsp. rose water
- whipped cream.
Using a mortar, pound the flower petals, or you can crush with a spoon. Mix the salt, sugar, and allspice together. Scald petals with the milk and vanilla bean. Remove bean, add egg yolks and dry ingredients. Cook on low heat. When mixture coats a spoon, add rose water and cool. Top with whipped cream, garnish with fresh marigold petals.
- 1 quart of water, spring water is best.
- 1 cup of honey.
- 1 sliced lemon.
- 1/2 tsp. nutmeg.
Boil together all ingredients in a nonmetallic pot. While it is boiling, scrape off the top scum with a wooden spoon. When there is no more "scum" add a pinch of salt and the juice of half a lemon. Strain and cool. Drink during The Simple Feast.
Most of you already have most, if not all of these ingredients. If you don't, fret not! They are readily available at your local grocery store. As always, have fun while making your magic and never take yourself too seriously. If you missed an ingredient, try again. Practice makes perfect, and you are free to add anything to make it even more magical! Do add intention while gathering your ingredients, making the recipes, and as you ingest the cakes, mead and custard.
